Making one’s own herbes de Provence

Can you believe I actually reached for the packet of dried herbes de Provence at the supermarket this week?

It was an instinctive gesture as I was going to make a chicken casserole and didn’t think.

First that I actually had a jar of little herbs in the pantry.

And secondly, that the ingredients were exactly two… and I have both in abundance in the garden.

Am I an idiot or what?

So out I went and picked some of my satureja Montana thyme… which turns out to be winter savory… I never knew. I love it as it gives such long stalks of leaves and smells divine.

Add in a few small bay leaves plucked from Lisa’s plant growing merrily in the dry garden underneath a pine and too close to a rampant cistus.

And it couldn’t be easier.

That’s what I love about gardening. You can be doing it for over twenty years, and learn something new every week.
